Black cod, also know as sablefish, has a delicate flakey texture that is rich in Omega-3's and other healthy oils. When it melts in your mouth you'll understand why some people call it butterfish.
Ingredients
1/8 cup mirin
1/8 cup sake
1/8 cup white miso paste
1 1/2 tablespoons granulated sugar
2 black cod filets (12-16 ounces)
To marinate:
2-3 days before serving, make your marinade and start marinating your fish.
Bring the sake and mirin to a boil in a medium saucepan on medium heat. Boil for 20 seconds to evaporate the alcohol
Turn down the heat to low, add in miso paste and whisk.
When miso has dissolved completely, turn the heat to high, and add the sugar. Stir constantly to avoid it sticking to the bottom.
When sugar is completely dissolved, remove from heat and set aside to cool to room temperature
To cook:
Preheat oven to broil with a rack about 8 inches from the top heating element.
Place your filets on a baking sheet lined with foil.
Broil for 6 minutes. Turn baking sheet 180 degrees and broil for 6 more minutes.
